Baker's Corner: Lemon Sugar Cookies

Have you ever just wanted to try something that is lemon based without having to suck on a lemon? So have I. I wanted something that was sweet and you could taste the lemon but it was not overwhelming. So I was searching on Pinterest for exactly that. I came across many recipes before I found one that seemed to really speak to me. It was a sugar cookie that adds the flavor of lemon. This was a cookie that I could get behind. So I got all of my supplies out to make this amazing cookie. I do mean it was amazing.

The recipe was a fairly simple one and even fairly quick. I was honestly surprised how quickly I managed to whip this batch of cookies up. I mean it was like heaven on Earth with the smell in my kitchen. Granted I've been baking all week and those items will be popping into my Baker's Corner soon. However, back to these cookies. If you are looking for simple I will say that this is simple. I will admit that I left out the lemon zest because I just didn't want too much of a lemon taste and I didn't have any of that on hand but it didn't seem to matter too much.

I also added a  bit of yellow food coloring to give them the yellow color that they needed. I have made numerous cookies this week so I needed to be able to tell them apart. You'll be seeing the Cheesecake Cookies and the Jell-O cookies in posts to come.

Lemon Sugar Cookies

Prep Time: 10 Minutes
Cook Time: 10 Minutes
Total Time: 20 Minutes

Soft and Chewy Lemon Sugar Cookies are the perfect balance of sweet and slightly tart.
Serves: 20

Ingredients:

1 Cup Butter, Cold, Cut into cubes
2 Cups Sugar
2 Eggs
1 Teaspoon Pure Vanilla Extract
1 1/2 Tablespoon Fresh Lemon Juice
1 Tablespoon Lemon Zest (may put more lemon zest for extra flavor)
3 Cups Flour
1 1/4 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
**May put in a drop of yellow food coloring to make the cookies more yellow

Directions:

1. Preheat oven to 350 degrees.
2. In a large bowl, cream butter and sugar for 4 minutes until light and fluffy. Add eggs, vanilla, lemon juice, and lemon zest and stir to combine.
3. Stir in flour, baking powder, baking soda, and salt and mix just until combined.
4. Drop dough onto light colored baking sheet.
5. Bake for 9-11 minutes. Sprinkle with sugar or white sparkling sugar.

My kids ate these cookies up honestly. I also ate a great many of them myself. I have to say that the only thing that I may be upset about is how they just didn't seem to last long enough. I have not yet made another batch of these cookies yet. I do plan to make some more soon but now is just not that time. I will be spending a great deal of time making cookies once the children are back in school and I will be able to spend a great deal of time baking once again.

These cookies during the process of making them seemed to take just a short amount of time to do. I know the total time said 20 minutes but I feel that it took less time than that. Of course, I had many supplies sitting out at once and did not have to hunt for anything. This was one of the simplest cookies that I have made and trust me these will be made again. I highly recommend these cookies if you want a simple sweet yet tart cookie.

March Reads

 I have been doing really well with reading however so as not to overwhelm myself we are sticking with the three book rule. Let's hope we really get somewhere with it again.
