Pizza Roll-Ups a Non-Sandwich Idea

So I've been trying to find some fun lunch ideas for my kiddos to try so they are not taking sandwiches to school daily. I found quite a few ideas that my kids will eat up with no questions asked. I mean it was a surprise on the fact that they would eat these things with no questions asked. I mean I was wondering what I would feed my pickiest eater for lunch during the school year. So during the summer last year we started to try out a bunch of new options for lunch. There are many things that they decided they didn't like and then many things that they decided they liked. Now one item that I made during the summer last year my oldest decided he would eat it all day every day. However, I'll talk about that one in a different posting later.

This week I want to discuss Pizza Roll-Ups. I was a little hesitant on this one because my littlest one is not a fan of pepperoni. So let me be completely honest, everything that I gave to my children to try I ate before they did. If I did not like it then I decided that I would not try to feed it to my children. So let's talk about this pizza roll-up and what is on it.

Items Needed:

Cream Cheese
Tortillas
Italian Cheese
Pepperoni
Salami Slices
Pizza Sauce *Optional*

Putting them together:

First, you'll spread cream cheese on the tortilla. Then you'll sprinkle it with Italian Cheese. You can put as much cheese or as little cheese as you want on these. My kids love cheese so we pack on the cheese. Then you will lay Pepperoni and/or Salami slices over the cheese. You do not have to have both but I tend to give them both because they expend a lot of energy during the summer and these are something that I often times fix during the summer. You will then roll them up and slice them like pinwheels. You can add pizza sauce if you want for them to dip into but that is completely up to you.

Rating Scale Per Child:

Doodle Bug: 4 out of 5

He loves taking these for lunch and even enjoys them for a random snack at home when I'm busy and these are just pretty easy to whip up multiples at once for them to snack on. He has asked to try these heated up but I haven't gotten there yet.

Short Round: 3 out of 5

He's not a big fan of pepperoni and that is just the weirdest thing because he used to eat pepperoni a lot once upon a time. He doesn't like eating these but there is a similar version of this that he likes to eat that I'll be sharing with everyone soon!

Overall mom opinion:

I enjoy making these for them or even the other version that Short Round will eat.  These are even a quick little snack that I enjoy eating when I can because hey if they eat it nine times out of ten I'll also eat. If you try this with your little ones but add or take something away please let me know I'm always looking for new things to try with my kiddos for lunch.

2022 Goals

So, let's jump right into it. I've set some goals for the year and I'm pretty well positive that they may be a little unrealistic. Hey, I'm nothing if not positive when it comes to my reading. I like to try and say I'm definitely going to get this done only to know I'm not going to get this done. I would say that this is not a bad habit but I know pretty well that this is in fact a bad habit. It's a bad habit that I probably need to kick but I'm just so consistent with it. So let's talk about those goals real quick. I want to make the attempt to read at least 52 books. They can be anything. I'm going to be picky. They can be short stories, full novels, manga, graphic novels, the sky is the limit when it comes to reading. I mean I'm not putting a limit on the type. However, I've got some smaller goals that I'd like to look at accomplishing as well and they will be accomplished with my big goal of 52 books. I want to read about 10 to 15
